Founder Harley Carbery brings a unique blend of passion and pedigree to HarleyWine. Born in Victoria, BC. His journey took him from Canadian hospitality to elite dining rooms in Las Vegas and beyond.

His Story

Harley Carbery is currently the Corporate Wine Director for a Las Vegas based Casino & Hotel Company, overseeing wine operations across 7 hotel-casino properties and 12 neighborhood taverns in Las Vegas, managing sourcing, purchasing, training, and menu development.

With over two decades of elite wine and hospitality experience, Harley has earned a reputation for

excellence while curating exceptional experiences for some of the most discerning clients in the world. He has personally taken care of U.S. Presidents, Prime Ministers, A-list celebrities, world-class athletes, and high-net-worth individuals—delivering unparalleled service, discretion, and expertise at every turn.

Previously, he worked at Johnson Brothers of Nevada as Luxury Portfolio Manager and District Manager, leading a team that serviced top restaurants and luxury hotels.

​

Before sales, Harley was Director of Wine at Mandalay Bay Resort and Casino, overseeing a 150,000-bottle collection, 4,000 labels, a team of 9 sommeliers, and wine operations across the property’s award-winning dining outlets.

​

Originally from Canada, Harley discovered his passion for hospitality early, starting at his families Dairy Queen and later working at multiple Fairmont Hotel & Resort Properties, where he specialized in French cuisine, earned a degree in Hotel and Restaurant Management, and developed a love for fine dining and wine.

​

Working as the General Manager at The Wine Room and The Wildflower restaurants at The Fairmont Chateau Whistler he and his team lead The Wine Room to AAA Four Diamond status and a Wine Spectator Best of Award of Excellence.

​

He moved to Las Vegas in 2007 to work at The Ritz-Carlton Lake Las Vegas, then joined Joël Robuchon’s restaurants at the MGM Grand, eventually becoming Wine Director, where he helped Joël Robuchon Restaurant earn 3 Michelin Stars from the Michelin Guide and the Wine Spectator Grand Award in 2009.​

Harley holds multiple wine certifications, including, Sommelier Diploma Program (International Sommelier Guild), Certified Sommelier (Court of Master Sommeliers), Certified Spanish Wine Educator, Certified Sake Specialist, and WSET Level 2 Award in Wines (with Distinction).
